Spicy White Bean Sausage & Spinach Soup!

Oh My Gosh Guys!  This is one of my ALL TIME favorite crock pot recipes!  Especially on a cold winter day & I mean anything made in the crock pot is usually a WIN, right?! This is definitely a must try & can be made without the spicy sausage so that it is kid friendly!  I know dinner is 20 times easier when the kids can enjoy it too!!  

Prep Time 10 minutes
Cook Time 8 hours, 5 minutes

Ingredients
  • 1 tablespoon of olive oil 
  • 1 package of your favorite sausage (I used the spicy sausage) 
  • 3 cloves of minced garlic
  • 1 onion
  • 2 carrots
  • 1 celery stalk
  • 2 cans of Great Northern beans, drained & rinsed 
  • 4 cups of chicken broth 
  • Kosher salt & ground black pepper, to taste
  • 3 cups of baby spinach

Directions
Heat olive oil in a skillet over medium heat.  Add your sausage & cook, stirring frequently until the sausage is browned, for about 3 to 4 minutes.  Place your sausage, garlic, onion, carrots, celery, beans, in your crock pot.  Stir in chicken broth & 2 cups of water & season with salt & paper to your taste!  Cover & cook on low heat for 7 to 8 hours or high heat for 3 to 4 hours.  Stir in spinach last until it's wilted.
I served my soup on top of a bed of brown rice which made it even more filling!  This is a great, hearty soup that taste even better the next day for lunch or dinner!  And to make it just a little bit better, it's clean & can fit into many meal plans!
