Homemade Blackened Salmon

Last night’s dinner was SOOO GOOD guys!!  I made homemade blackened salmon! *Shocked Face Emoji*  I was pretty impressed with myself as well! HAHA!  Plus, it was a carbless dinner so that makes me feel even more like a BADASS!!  I added a mix of broccoli and cauliflower but you could obviously add any veggie of your choice & a carb too :No Judgement: ;) It would be great paired with brown rice or quinoa!  Okay here’s the recipe!!

Prep Time 15 minutes
Cook Time 10 minutes

Ingredients
·         Fresh Salmon
·         Paprika
·         Onion Powder
·         Garlic Powder
·         Thyme
·         Oregano
·         Cayenne Pepper
·         Kosher Salt
·         Black Pepper
·         Olive Oil

Directions

Cover both sides of your salmon in the blackened seasoning, depending on how spicy you like it.  Heat the olive oil in a pan over medium high heat and place the salmon in the pan and cook for 3 to 4 minutes then once the salmon until a nice crust is formed.  Flip the salmon to the other side for another 3 to minutes until salmon is cooked through.  Serve warm!!

Nursing at 21 Months

Oh my goodness!  So last night's sleep was a little rough guys!  Railynn is 21 month & is still nursing.  Last night she woke up several times to nurse or comfort nurse I'm sure you could really call it!  I love breastfeeding and the bond it has created between Railynn and myself but I am getting a little exhausted to be honest!  I know all the added benefits of "extended nursing" as well as the benefits in letting her "self wean" but when will she self wean?! LOL Just curious on how long other moms have been nursing their babies & how did you get your little ones off the booby??  We've been going strong for 21 months, no formula, but this mumma is pretty tired & exhausted!!  Send me your tips friends!!

Spicy White Bean Sausage & Spinach Soup!

Oh My Gosh Guys!  This is one of my ALL TIME favorite crock pot recipes!  Especially on a cold winter day & I mean anything made in the crock pot is usually a WIN, right?! This is definitely a must try & can be made without the spicy sausage so that it is kid friendly!  I know dinner is 20 times easier when the kids can enjoy it too!!  

Prep Time 10 minutes
Cook Time 8 hours, 5 minutes

Ingredients
  • 1 tablespoon of olive oil 
  • 1 package of your favorite sausage (I used the spicy sausage) 
  • 3 cloves of minced garlic
  • 1 onion
  • 2 carrots
  • 1 celery stalk
  • 2 cans of Great Northern beans, drained & rinsed 
  • 4 cups of chicken broth 
  • Kosher salt & ground black pepper, to taste
  • 3 cups of baby spinach

Directions
Heat olive oil in a skillet over medium heat.  Add your sausage & cook, stirring frequently until the sausage is browned, for about 3 to 4 minutes.  Place your sausage, garlic, onion, carrots, celery, beans, in your crock pot.  Stir in chicken broth & 2 cups of water & season with salt & paper to your taste!  Cover & cook on low heat for 7 to 8 hours or high heat for 3 to 4 hours.  Stir in spinach last until it's wilted.
I served my soup on top of a bed of brown rice which made it even more filling!  This is a great, hearty soup that taste even better the next day for lunch or dinner!  And to make it just a little bit better, it's clean & can fit into many meal plans!
